How to Make Rellenong Bangus

Ingredients:

1 pcs. (700 grams) bangus

½ tbsp. salt

3 tbsp.cooking oil

2 pcs.potatoes (diced)

¼ cups grean peas

¼ cups sweet pickle relish

2 tbsp.soysauce & calamansi juice

4 cloves garlic (chopped)

½ cups raisins

¼ cups sweet red bell pepper (diced)

2 hard cooked eggs

½ tsp. pepper( white-powder)

Procedure:

1. Remove scales, gills and internal organs through mouth opening,then wash and drain.

2. Break the tail and insert spatula between skin and flesh from neck down to the tail. Then squeeze out the flesh.

3. Soak skin in soysauce-calamansi mixture for about 10 minutes.

4. Saute garlic,onions,add raisins,peas,relish then season with salt & peeper.remove from heat & add cooked eggs.

5. Stuff the whole mixture into the skin of the fish

6. Wrap in banana leaves and fry in hot oil: or roll in some amount flour then fry.
