Materials / Ingredients:
-1 kg chayote
-2 regular size carrots
-1 red sweet pepper
-2 pcs. Hot pepper (optional)
-20 pcs. Native onions
-1 small piece ginger
Procedure:
1. Wash, peel and cut vegetables into long thin strips.
2. Work separately the vegetables with salt and set aside for 1-2 hours to wilt.
3. Press to remove part of the juice.
4. Mix the vegetables and pack in a clean glass jars.
5. Pour the hot pickling solution.
6. Remove air bubbles and seal tightly.
Pickling Solution: ¾ cup sugar, 1 cup vinegar, 1 tbsp. of salt.
