How To Make Rolled Fondant Icing

Ingredients:

-1 tbsp unflavored gelatin

-½ cup glucose

-2 tbsp vegetable shortening (lard)

-2-3 drops food color/flavoring (as desired)

-¼ cup cold water

-1 tbsp glycerin

-1 kilo confectioner’s sugar


Procedure:

1. Combine gelatin and cold water, let it stand until stick.

2. Place gelatin mixture on top a double boiler and heat until dissolved.

3. Add glucose and glycerin; mix well.

4. Stir in shortening and just before completely melted, remove from heat.

5. Mixture should be cool until lukewarm.

6. Place ½ kilo of confectioner’s sugar in a bowl and make a well.

7. Pour in the cooked gelatin mixture into the well little by little also adding the remaining sugar until stickiness disappears.

8. Knead until the fondant is smooth, pliable and does not stick to your hands. If fondant is too short, add more sugar, if too stiff, add water (a drop at a time).
