How to Make Dimsum Style Chicken Feet

Ingredients:
Prepare:
1 kg chicken feet (chop off nails) – blanch in boiling water for 10 mins. Cool, then remove yellow scales.

In 1/3 cup oil, sauté:
a. 1 head crushed garlic
b. 1 tbsp ginger
c. ½ cup chopped leeks
d. 2 tbsps each of tausi and chili bean sauce
3. Then add chicken feet. Mix a while.

Add:
a. 2 tbsps golden swan soy sauce
b. 2 tbsps sugar
c. ¾ cup water
Place in a pressure cooker and cook 10 mins. Thicken with 1 ½ tbsps cornstarch dispersed in water. Add new drop of chili oil.

Note: If pressure cooker is not available, use 1 ½ cups water and simmer over low fire in 30 mins. Can add previously soaked black seaweeds.
